Puff Pastry

  • Ingredients for 1 person:
    • 3 slices Crust Away bread
    • seasonal red berries
    • 2/3 cup of sugar
    • 2 egg yolks
    •1 2/3 cup of milk
    •1/2 cup of cornflour
    • lemon peel

  • Prepare the cream: whip the eggs and cornflour with the sugar and the lemon peel. In a saucepan, boil the milk and pour it into the other ingredients. Continue to stir with a whisk over a low heat until the cream thickens. Roll out the bread with a rolling pin to make it thin, put sugar over the top to caramelize and place in the oven at 350° for 6/7 minutes. Once the layers have been removed from the oven make them into rectangles. Garnish one level on top of the other, first with the cream and then the red berries. Serve with a sprinkling of icing sugar.
